What are the most common syrups used in cocktails?

Common syrups for cocktails include simple syrup cane sugar (although you can make a Demerara syrup), honey syrup, agave syrup, orgeat syrup, grenadine syrup, elderflower tonic, and oleo sacrum. You can also infuse your own simple syrups for cocktails and make something like rosemary simple syrup or lavender syrup.

How long do simple syrups last?

Plain simple syrup will last approximately 3-4 weeks, while flavored simple syrup lasts about 1-2 weeks; this is true for both store bought and homemade syrups. But make sure to store your syrup for cocktails in the fridge, no matter the kind you use!

What do you keep syrups in?

Keep your simple syrup in an airtight container-- like a Mason jar-- in the fridge. Make sure your jar has a tight seal to maintain freshness, and always keep it cold so the syrup doesn't spoil.

The main way to change the profile of syrup is through infusion; for example, you can add herbs or fruits to your simple syrup when heating the sugar and water, and then fine strain the syrup.
