We’ll begin by discussing what bitters & tinctures are, readily-available options you can buy at the store, and how these play into cocktails with a focus on when and why to use them. Together, we’ll make 6 classic cocktails without these ingredients to get a base understanding of each drink’s flavor profile. Then we’ll step you through how to develop your own bitters & tinctures, exploring the equipment needed, safety elements, step-by-step process, and ingredients. Finally, you’ll explore how your concoctions affect the same 6 cocktails to best understand flavor manipulation and evolution.

What are bitters & tinctures, and what is their purpose in cocktails?

Bitters & tinctures are flavor concentrates that are used to bring flavor to and/or balance out cocktails.

What is the general process for creating homemade bitters, and how long does it take?

The general process is generally a longer form of alcohol-infusion with more concentrated flavors. Depending on the method used, it can take days to upwards of 4-6 weeks. The longer the infusion process, the stronger the flavor.

What is the difference between bitters and a cocktail tincture?

Tinctures are concentrates of one or more flavors that are meant to bring additional, typically non-bitter taste & depth to a cocktail. Bitters are concentrates of one or more flavors with a strong, bitter profile that bring a specific taste and act as a powerful balancing tool for cocktails.

Are cocktail bitters alcoholic? Can I make non-alcoholic bitters for mocktails?

Most bitters are alcoholic, but not all are. Bitters and tinctures are just flavor concentrates, and they can be created any number of ways without using alcohol, such as with heat or glycerine.

Do certain bitters go better with specific base spirits?

Not really. There are natural flavor pairings that work together well and some that won't work. It more depends on the overall flavor of your cocktail more than the flavor of your base spirit.

Are there any safety concerns when making bitters at home?

Do I need any specialized equipment to make homemade bitters?

Generally, no. A simple 2 liter jar with measuring cups and spoons can get the job done. However, there are some specialty tools that help with the process, but they are not completely necessary.

What are the storage recommendations for homemade bitters?

Be sure to strain out all of the particulates thoroughly, and then store in a cool dry place indefinitely.

Are there any common mistakes to avoid when making homemade bitters?

Yes. Using too much or too little of one or more ingredients and letting the infusion sit for too long or not enough time are all common mistakes. Start with already established recipes, and follow them to the letter to avoid miscalculations.
